Pasta is the perfect Sunday meal for the whole family. It’s tangy, delicious and gives us all a much-needed mood boost to take on the week ahead. The best part of it is that you can always get creative with Pasta and give it your own personal touches to make it that little bit more enjoyable! So how about Pasta with some delectable desi spices? An Italian pasta recipe with an Indian twist for that added spiciness and flavor! Famous Bollywood actress and lifestyle influencer Shilpa Shetty, who is known for her creative cooking certainly thinks so. And she uses Nutralite Doodhshakti Probiotic Butter Spread for this luscious masala pasta recipe! And the best part about it? It doesn’t take a lot of time to prepare!
1 bunch spinach, washed and chopped
1 cup corn kernels, cooked or canned
1/4 cup chopped red onion
4 tbsp mayonnaise
4 slices whole-wheat bread
Salt and pepper to taste
Boil spinach leaves and corn kernels. Sauté chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.
Cut out the sides of the bread slices, then flatten the bread slices with a rolling pin. Spread a generous layer of neutral veg mayo on bread slices. Place the spinach and corn mixture evenly on each slice. Roll the bread slices tightly to form a log. Refrigerate for a while to set.
Once the pinwheel log has been set, slice it into rounds. Arrange on a plate, and your Nutritious Spinach and Corn Pinwheels are ready to be served.
To begin with, ensure you have all the right ingredients ready and available, so that the cooking process goes smoothly! Here’s what you’ll need
½ Roughly Chopped and Boiled Carrot
¼ Cup Chopped Red Capsicum
¼ Cup Chopped Yellow Capsicum
¼ Cup Chopped Green Capsicum
¼ Cup Boiled Green Peas
2 Blanched and Puréed Tomatoes
1 tsp Finely Chopped Garlic
1 Finely Chopped Onion
Coriander Leaves
1 tsp Cumin (Jeera)
2 tsp Vegetable Oil
Coconut Sugar
Red Chilli Powder
Pav Bhaji Masala
Any Type of Pasta
Grated Cheese
Salt

In a separate utensil, add some Pasta to a bowl and boil it in hot water for a few minutes until it is soft enough. You can add a tbsp of salt to this. Don’t boil it to the point it is fully cooked. Maintain a slight rawness to it. It will get cooked further once it is added to the Masala mix.
There isn’t really a limit to the type of vegetables you can add to a Pasta. We’d suggest slightly pre-cooking them and keeping them ready so that they add a bit more flavor.
Rather than chopping the tomatoes, we’d suggest making a paste out of them by blanching them and then puréeing them.
Pour 2 tsps of vegetable oil into a pan and bring it to a boil
Add 1 tbsp of Nutralite Doodshakti Probiotic Butter Spread to the pan and mix it with the oil. With all these ingredients in the pan, sauté the mix until the onions look slightly cooked/
Add some vegetables of your choice to the mix. We’d suggest pre-cooking these vegetables before adding them to the mix. Ms. Shetty’s choice of vegetables for this Indian masala pasta recipe include carrots, tomatoes, peas, and red, yellow and green peppers. All finely chopped.
Make a purée paste out of 2 blanched tomatoes and add it to the mix.
For a hint of sweetness and to reduce the sourness from tomatoes, add ½ tsp of coconut sugar to the mix.
The next step is to add ½ tsp of red chilli powder to the mix. Because of an Indian style masala pasta recipe without the spicy taste of chilli powder.
Here’s the main trick for the perfect veg masala pasta recipe. Add 1 tsp of pav bhaji masala to the mix.
There’s no need to waste the water in which you cooked the Pasta. Add ½ cup of that water to the mix and stir it.
Once the pasta sauce looks ready, taste it and see if it feels savory enough. If you feel like you need to, sprinkle some salt over it.
For a healthy Italian pasta recipe, we’d suggest using whole wheat pasta. Add 100gms of boiled Pasta to the sauce and stir it.
