
Desi breakfast dishes are always a happy feeling, from sabudana khichdi to Indori pohe to dosa with sambar. There’s always something you can enjoy for every mood. And when that mood calls for something soft, wholesome and full of nutritious veggies, then vermicelli upma is what comes to mind. It’s like regular rava upma, but MUCH tastier, and feels a lot nicer to eat. Vermicelli or “Asian noodles” or “seviya” as it is popularly known in India is among the nicest ingredients to use for dishes like upma and kheer. And with this simple vermicelli upma recipe, you can cook up a quick breakfast and enjoy a tasty meal that releases happy endorphins.
1 bunch spinach, washed and chopped
1 cup corn kernels, cooked or canned
1/4 cup chopped red onion
4 tbsp mayonnaise
4 slices whole-wheat bread
Salt and pepper to taste
Boil spinach leaves and corn kernels. Sauté chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.
Cut out the sides of the bread slices, then flatten the bread slices with a rolling pin. Spread a generous layer of neutral veg mayo on bread slices. Place the spinach and corn mixture evenly on each slice. Roll the bread slices tightly to form a log. Refrigerate for a while to set.
Once the pinwheel log has been set, slice it into rounds. Arrange on a plate, and your Nutritious Spinach and Corn Pinwheels are ready to be served.
1 Cup Vermicelli
1 Tsp Mustard Seeds
1 Stem Of Curry Leaf
1 Medium Onion
1″ Piece Of Ginger
5-6 Cloves Of Garlic
1/2 Cup Chopped Mixed Vegetables (Carrots, Beans, Peas)
1 Tsp Coriander Powder
1 Tsp Cumin Powder
1 Tsp Amchur Powder (Ground Mango Powder)
1/2 Tsp Turmeric Powder
1/2 Tsp Sambar Masala
1 Pinch Of Asafoetida (Hing)
1 Green Chili
2-3 Tbsp Oil
Salt To Taste
Roast the vermicelli in a tablespoon of cooking oil. Make sure that it doesn’t get too brown or it will feel overcooked. Once it is the right colour, set it aside to cool it.
In the meantime, heat 1-2 tbsps of oil in a kadhai or wok, add mustard seeds until they crackle. Then add cumin seeds, asafoetida, and the curry leaves. Cook it for a few seconds.
First add the chopped chilli, garlic and ginger to the masala and let it cook for a minute. Then mix the vegetables and onions and cook until they soften up a bit. Just a bit.
But before you do, add some salt, turmeric powder, coriander powder and amchur powder to the mix. Then add the roasted vermicelli and mix the contents well together.
Pour some water into the mix to the point where it covers the vermicelli. Then cover the Kadhai with a lid and reduce the flame. Let it cook until the water dries up completely. Occasionally stir the ingredients so that the water is spread evenly across them.
You’re nearly there. Add some sambar masala and Nutralite Doodhshakti Pure Ghee to the vermicelli ingredients and stir it together. The Vermicelli should look orange. Once that is done, your vegetable vermicelli upma is ready to serve.
