1 bunch spinach, washed and chopped
1 cup corn kernels, cooked or canned
1/4 cup chopped red onion
4 tbsp mayonnaise
4 slices whole-wheat bread
Salt and pepper to taste

Start with heating some olive oil in a large pot over medium heat. After a couple of minutes, add onions, salt and pepper and cook until it all softens. Keep stirring them as they cook, for about 8 minutes.
Next, add the smashed garlic cloves and roughly chopped carrots to the mix and cook it on a medium flame for an additional 8 minutes. Keep stirring this like before.
Next step is to add some ginger and apple cider vinegar to the broth and stir it as it boils.
