As always, to begin with, make sure you have all the ingredients in place for this delicious pasta with veggies recipe. You’ll need the following ingredients:
1 tsbp Oilive Oi
1 tbsp Garlic
½ Cup Baby Corn
1 Cup Red Capsicum
2 Cups Boiled Pasta (Any Pasta Will Do)
1 Cup Boiled Water
2 tbsp Basil Pesto Pasta Sauce
Broccoli Cut into Small Pieces
A Jar of Nutralite Cheesy Garlic Mayonnaise
2 tbsps Salt
Crushed Red Chillies
In a separate utensil, add some Pasta to a bowl and boil it in hot water for a few minutes until it is soft enough. You can add a tbsp of salt to this. Don’t boil it to the point it is fully cooked. Maintain a slight rawness to it. It will get cooked further once it is added to the Pesto-Veggie mix.
Chop the broccoli into small pieces and toss it into boiling water for 2 minutes. Once you’ve done this, toss the boiled broccoli into a bowl of clean, cold water.
It is advisable to prepare the Pesto Pasta Sauce beforehand and keep. It is made with basil leaves. Usually it is made with Pine nuts, but you can also use peanuts, walnuts or almonds. Roast the nuts you’re using for added flavor and crunchiness. You can also add garlic,parmesan cheese and salt
In a large enough container to hold the size of your serving of Pasta, pour 1tbsp olive oil and bring it to a boil.
Add 1 tbsp ground garlic to the boiling olive oil and spread it around the container.
Add ½ cup boiled corn to the mix. Corn will add some crunchiness and delicate sweetness to the Pasta.
Add 1 red capsicum and sauté it
It’s time to add two cups of boiled pasta to the mix, along with ½ cup of water. Gently shake the pot to ensure the boiling water is spread evenly throughout the pasta mix.
Add 2 tbsps of basil pesto to the mix.
The next step is to add 2 tbsps of water to the mix and gently stir it as it sizzles.
Add 3 tbsps of Nutralite Cheesy Garlic Mayo spread to the mix along with ¼ cup of water and stir it. This mayo spread gives your child 15% of their recommended daily allowance of Vitamins A,D2 and E
To add some flavor to the Pasta, add a pinch of salt and red chilli flakes to the mix.
Finally, add the broccoli to the mix and stir it for a final time. Once you get the right essence of prepared Pasta, it’s ready for your kid’s lunch box.
