1 bunch spinach, washed and chopped
1 cup corn kernels, cooked or canned
1/4 cup chopped red onion
4 tbsp mayonnaise
4 slices whole-wheat bread
Salt and pepper to taste
Boil spinach leaves and corn kernels. Sauté chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.
Cut out the sides of the bread slices, then flatten the bread slices with a rolling pin. Spread a generous layer of neutral veg mayo on bread slices. Place the spinach and corn mixture evenly on each slice. Roll the bread slices tightly to form a log. Refrigerate for a while to set.
Once the pinwheel log has been set, slice it into rounds. Arrange on a plate, and your Nutritious Spinach and Corn Pinwheels are ready to be served.

A pack of oats/oatmeal
Baking Powder

Pour out the pack of oatmeal into a bowl and add milk to it. Make sure the volume of milk you’re adding to the oatmeal is slightly more than the volume of oatmeal so that it submerges the oats. Leave it like that for 10 minutes. You’re essentially soaking oats in milk, which is exactly how you’d serve it for your kids as a cereal. Oats with milk is one of the best nutritious snacks for kids, after all!
Once the oatmeal has absorbed the milk, add some brown sugar, oil, vinegar and Nutralite Doodhshakti Probiotic Butter Spread to the mix and stir it to combine it into a dough. In a separate medium sized bowl, pour some flour, baking powder, baking soda, salt and cinnamon and turn it into a mixture. Then add this mixture to the oat muffin dough you prepared in the previous step and stir it together until they combine. Make sure they’re stirred well and all the ingredients are merged together. This will help in the next step and they’ll turn into easy oatmeal muffins.
Add the batter to some paper liners and place these paper liners into a muffin pan, ideally a 12-cup or an 8-cup one so that it is easier for you to keep track of how many muffins you’re making.
We’re at the final step of this easy oatmeal muffin recipe. Baking the muffins. Sprinkle some extra oats or brown sugar on top of the muffin caps for extra taste. Bake the muffins for 7 minutes. Then lower the heat in the oven and bake for another 12-15 minutes. Let the muffins cool in the muffin pan before transferring them to a cooling rack.
