1 cup Rolled Oats
1 tbsp Oil
1 tbsp Mustard
½ tbsp Urad dal
½ tbsp Jeera/Cumin
Few Curry leaves
10 Cashew / Kaju, whole
1-inch Ginger, finely chopped
2 Chilli, slit
½ Onion, finely chopped
½ Carrot, finely chopped
5 Beans, finely chopped
¼ Capsicum, finely chopped
2 tbsps Peas / Matar
½ tbsp Turmeric
¾ tbsp Salt
2 tbsps Coriander, finely chopped
2 tbsps Coconut, grated
1 tbsp Lemon juice

In a large kadhai, heat 1 tbsp of cooking oil. Add 1 tbsp mustard, ½ tbsp urad dal, ½ tbsp jeera, a few curry leaves, and 10 cashews. Sauté until the cashews turn golden brown.
Add 1 inch of finely chopped ginger, 2 slit green chillies, and ½ finely chopped onion.
Sauté until the onion becomes translucent.
Add ½ tbsp chopped carrot, 5 finely chopped beans, ¼ finely chopped capsicum, 2 tbsp peas, ½ tbsp turmeric, and ½ tbsp salt. Stir well to combine. Add 2 tbsp of water, cover the kadhai with a lid, and let the mixture simmer for 5 minutes.
Remove the lid and add 1 cup of water (or ¼ cup if using an instant oat mix). Bring it to a boil. Add roasted oats to the mixture and stir well until the oats absorb all the water. Cover the kadhai again and let it simmer for 5 minutes, or until the oats are fully cooked.
Add ¼ tbsp salt, 2 tbsp finely chopped coriander, 2 tbsp grated coconut, and 1 tbsp lemon juice.
Mix everything together.
