There’s nothing quite like a simple meal. Especially when it’s for breakfast, to begin your day. A good, easygoing breakfast to start your day can go a long way toward boosting your mood and ensuring you stay productive and upbeat throughout the day! What if we told you it could be even simpler and healthier? Yes, please. Enter oats upma, a tasty, healthy meal that doesn’t take long to prepare and can be enjoyed for breakfast! All you’ll need to do is follow this simple oatmeal recipe.

Ingredients

For the Filling:

1 bunch spinach, washed and chopped

1 cup corn kernels, cooked or canned

1/4 cup chopped red onion

4 tbsp mayonnaise

For the Pinwheels:

4 slices whole-wheat bread

Salt and pepper to taste

Step 1: Prepare the Spinach and Corn Filling

Boil spinach leaves and corn kernels. Sauté chopped onions in a pan, add the boiled spinach, and mix well. Blend the mixture for a consistent texture. Combine with crushed corn and Nutralite Veg Mayo. Nutralite Veg Mayo is enriched with vitamins A, D2 & E.

Step 2: Assemble the Pinwheels

Cut out the sides of the bread slices, then flatten the bread slices with a rolling pin. Spread a generous layer of neutral veg mayo on bread slices. Place the spinach and corn mixture evenly on each slice. Roll the bread slices tightly to form a log. Refrigerate for a while to set.

Step 3: Slice and Serve

Once the pinwheel log has been set, slice it into rounds. Arrange on a plate, and your Nutritious Spinach and Corn Pinwheels are ready to be served.

Here are all the ingredients you’ll need to make this oats upma recipe at home. All of them are easy to obtain. Just make sure you have them all ready and accessible before you start cooking!

1 cup Rolled Oats

1 tbsp Oil

1 tbsp Mustard

½ tbsp Urad dal

½ tbsp Jeera/Cumin

Few Curry leaves

10 Cashew / Kaju, whole

1-inch Ginger, finely chopped

2 Chilli, slit

½ Onion, finely chopped

½ Carrot, finely chopped

5 Beans, finely chopped

¼ Capsicum, finely chopped

2 tbsps Peas / Matar

½ tbsp Turmeric

¾ tbsp Salt

2 tbsps Coriander, finely chopped

2 tbsps Coconut, grated

1 tbsp Lemon juice

Instructions

Once you have all the ingredients in place, you’re ready to get cooking! If you’re packing your child’s lunch box, this is one of the best healthy breakfast recipes for kids. Here’s how to make oats upma!

Step 1: Temper the Spices

In a large kadhai, heat 1 tbsp of cooking oil. Add 1 tbsp mustard, ½ tbsp urad dal, ½ tbsp jeera, a few curry leaves, and 10 cashews. Sauté until the cashews turn golden brown.

Step 2: Add Aromatics

Add 1 inch of finely chopped ginger, 2 slit green chillies, and ½ finely chopped onion.
Sauté until the onion becomes translucent.

Step 3: Add Vegetables and Spices and Let it Simmer

Add ½ tbsp chopped carrot, 5 finely chopped beans, ¼ finely chopped capsicum, 2 tbsp peas, ½ tbsp turmeric, and ½ tbsp salt. Stir well to combine. Add 2 tbsp of water, cover the kadhai with a lid, and let the mixture simmer for 5 minutes.

Step 4: Add Water, Oats, and Cook

Remove the lid and add 1 cup of water (or ¼ cup if using an instant oat mix). Bring it to a boil. Add roasted oats to the mixture and stir well until the oats absorb all the water. Cover the kadhai again and let it simmer for 5 minutes, or until the oats are fully cooked.

Step 5: Season and Garnish

Add ¼ tbsp salt, 2 tbsp finely chopped coriander, 2 tbsp grated coconut, and 1 tbsp lemon juice.
Mix everything together.

Step 6: Flavor Boost and Serve
